Supper: Salad (mixed baby greens, baby spinach and butter lettuce combo, with baby medley tomatoes, grated cheese mix, sweet onion, crispy onion bits tossed in Three Diamond Dressing. Wayside Observer Posted September 16, 2019 Report Share Posted September 16, 2019 I’m gorging on doe barbecue pork chops with a dry rub on them, steamed broccoli and gravy. Yeah, I nibbled at that one chop a bit before I put the gravy on to try it with the rub only since I crusted all sides of the chops with rub. Delicious! The leftovers are going to work tomorrow for lunch. captaintrolley Posted September 23, 2019 Report Share Posted September 23, 2019 A Greek Salad. Not exactly traditional ingredients. Hungarian Yellow Peppers, Baby Medley Tomatoes cut in half, sweet onion, Feta Cheese marinated over night in Three Diamond Vinaigrette Dressing. I used a bit too much dressing, but I am making another 'batch' since my neighbor brought over another pepper, so I can reuse the marinade, plus perhaps add a splash more. I am not a huge cucumber fan (love pickles though) so although my creation lacks color, I am fine with it and it is delicious. And a huge dish of fruit for dessert. Pear, Apple and seedless grapes.
