Do you know what happened to the one suburban that was built to NJT specs. I know what happened to the transit ones

It was sold to Somerset County Transportation in New Jersey and numbered 4025.  I don't know if they're still running it.

It's not unusual for a business to stay afloat for years after its primary business activity ends - the Penn Central existed for years as a business entity after the railroad went to Conrail.  MTS is not building buses and has no visible plan to begin producing buses again.
