Staying safe from COVID-19.

Same here while at the same time enjoying living my day to day life as closely to normal as I can while accommodating the circumstances.

To that end, yesterday I picked up two racks of St. Louis cut ribs from the local farmer’s market which was fully stocked with good food.  I also went to Walmart which was completely picked over in panic hoarding buying of everything but there was a freezer full of shrimp rings and a table full of freshly baked lemon meringue pies so I grabbed one of each.  So today, while I’m on my day off, I’m cooking a feast:

Hardwood lump charcoal to provide the heat.

The ribs.

And the smoker is in progress.  As long as good food is available, I plan to eat well.  If it isn’t, I do have stuff in the freezer which is normal because there are time when I’m busy or long duration shift work it’s great to just pull something out and shove it in the oven but it’ll hold me if there’s a supply chain hiccup for a few weeks.  Unless that happens, I intent to continue cooking fresh food as normal.
